The best-known bar and grill in Bon Temps, Merlotte’s (later Bellefleur’s) was a place where anyone could come and break bread with good people—as long as they weren’t aiming to cause trouble. Those who did would usually get an earful from Lafayette- or Tara, Arlene, Sookie, or any of the other characters that True Blood’s iconic restaurant employed. Sam opened Merlotte’s so people could come, sit down, and not have to dance, and it quickly became the closest thing to a community center in Bon Temps—everyone from truckers to church ladies to vampires passed through its doors to sip on cold beer (or warm Tru Blood). It’s where Bill and Sookie first laid eyes on each other, Terry and Arlene celebrated their wedding, and everyone came to chow down.
Lafayette was often found sweating in Merlotte’s “hot-as-hell” kitchen, where he cooked up everything from classics like burgers and fries to Jambalaya to a veggie burger for Jesus.
